Spring 2024

Breakfast

  • Yogurt Parfait – seasonal berries, greek yogurt, and organic granola
  • Nature’s Bakery Fig Bar 

    *** I can never go wrong the protein + carbohydrates in a yogurt parfait, but often when I’m getting in a workout + hustling to get the kids to school -or- other activities I need a little more. I get the 40 pack of Fig Bar’s for $18 at Costco, just be careful as they have a decent amount of sugar.

Lunch

  • Pasta salad with EVOO, grape tomatoes, and cucumber
  • Extra fruit – I love a summer fruit salad w/ honey + lemon juice 

Snack 

  • Carrots and pretzels w/ dip
  • Granola Bar – OR – Made Good’s Granola Bites 
  • Trail Mix – I actually really like Aldi/Lidl version as it’s a better portion without the chocolate, but Costco’s Kirkland’s Trail Mix taste’s the best!

Dinner

  • Chicken Breast in a crockpot with diced tomatoes, garlic, sea salt, and pepper, and roasted brussel sprouts and sweet potatoes
  • Everything Summer Salad – roasted broccoli, broccoli, and cauliflower over greens w/ berries, sliced almonds, and protein of your choice! Top with homemade lemon-garlic dressing (1/4c lemon juice, 1tsp garlic, 1/2 tsp salt, 1/2 tsp pepper, 1tbsp olive oil) with Texas toast (use Udi’s GF bread if needed)
  • Teriyaki Chicken & Rice Bowls – 1 cup of rice in the oven (or buy the microwavable bags for $1.50), sautéed chicken w Teriyaki sauce, and broccoli, onions drizzled in EVOO and salt + pepper sautéed and combined with the chicken!
